- 1-2 Medium Sweet Potatoes
- 1 Batch Easy Vegan Queso
- Toppings: black beans, tomatoes, jalapeno, corn, pickled red onions
- Thinly slice the sweet potatoes. Place on the mesh rack and air fry at 350 for 10-15 minutes, until the potatoes become crispy but not burnt. Alternatively, you can line a baking sheet with parchment paper, and bake in the oven at 450 for 15 minutes.
- Place the potatoes on a plate. Top with fresh queso, black beans, pickled red onions, jalapenos, corn, and tomatoes. Enjoy!
