Ingredients

  • 6-7 Roma Tomatoes
  • 1/2 White Onion
  • 3 Cloves Garlic
  • 1 Jalapeno
  • 1 Bunch Cilantro
  • 1/2 Lime
  • 3/4 Cup Black Beans
  • 1 Teaspoon Cumin
  • 1/2 Teaspoon Salt
  • 1/2 Teaspoon Pepper

Instructions

  1. Dice the tomatoes and onion. Mince the garlic and jalapeno. Roughly chop the cilantro. Juice the lime.
  2. Add all the ingredients to a medium bowl. Stir to combine. Let sit a few minutes, up to half an hour, to let the flavors meld. When ready to serve, enjoy with plant-based chips or veggies.
