Quick and Easy Black Bean Pico De Gallo
Black Bean Pico De Gallo is a quick recipe, made with just a few simple ingredients like tomatoes, onion, black beans, and spices.

- 6-7 Roma Tomatoes
- 1/2 White Onion
- 3 Cloves Garlic
- 1 Jalapeno
- 1 Bunch Cilantro
- 1/2 Lime
- 3/4 Cup Black Beans
- 1 Teaspoon Cumin
- 1/2 Teaspoon Salt
- 1/2 Teaspoon Pepper
- Dice the tomatoes and onion. Mince the garlic and jalapeno. Roughly chop the cilantro. Juice the lime.
- Add all the ingredients to a medium bowl. Stir to combine. Let sit a few minutes, up to half an hour, to let the flavors meld. When ready to serve, enjoy with plant-based chips or veggies.
