Ingredients

  • 2 Cups Rolled Oats
  • 1 Cup Puffed Millet
  • 3/4 Cup Shredded Coconut, divided
  • 1/4 Cup Chia Seeds
  • 1 Teaspoon Cinnamon
  • 1/2 Teaspoon Salt
  • 1/2 Cup Date Syrup
  • 2 Teaspoon Vanilla Extract
  • 1/2 Teaspoon Coconut Emulsion, optional

Instructions

  1. Preheat the oven to 300° F. Line a baking sheet with parchment paper.
  2. In a large bowl combine the oats, millet, 1/2 cup of the coconut, chia seeds, and cinnamon. Stir to combine.
  3. Add the date syrup, vanilla extract, and coconut emulsion. Stir until all the dry ingredients are evenly coated.
  4. Spread in an even layer on the baking sheet. Bake for 25-30 minutes, stirring halfway through.
  5. Let cool completely on the baking sheet. Then, break in to chunks and enjoy!
