When the weather gets warm I LOVE eating salads. They are so refreshing. But sometimes the same old basic salad gets boring. Also, sometimes if I eat to many raw veggies, I have trouble digesting a whole big salad.

There's a solution though. Get creative with your salad. Add grains, nuts, berries! With a few extra ingredients that are a bit easier to digest and much more interesting, you've got yourself the perfect summer salad.

This Berry Quinoa Spinach Salad has all that. Fresh berries, filling quinoa, and a healthy dose of spinach. So good!

Ingredients

  • Spinach: Spinach is SO good for you. I try to have a serving each day. This salad makes it easy and tasty!
  • Quinoa: A gluten-free grain, quinoa is perfect to add some bulk to this salad.
  • Cucumber: Cucumbers add a burst of freshness.
  • Berries: Blueberries & blackberries.
  • Sliced Almonds: For a bit of crunch. Also, fat helps you digest the salad greens better.
  • Sweet Dijon Balsamic Dressing: a mix of balsamic vinegar, water, dijon mustard, date syrup, and garlic.

The dressing really makes this salad. All the fresh ingredients are great, and the sweet, tangy balsamic dressing ties it all together.

How to make Berry Quinoa Spinach Salad

Step 1. Cook the quinoa. Rinse the dry quinoa, then add it to a small pot with 1 1/4 cups of water. Bring to a boil then simmer for 15 minutes.

Step 2. Make the dressing. In a small bowl, mix the balsamic vinegar, water, dijon mustard, and minced garlic. Set aside.

Step 3. To assemble the salads, divide the spinach between two bowls.

Step 4. Top with the quinoa and pour on a bit of the dressing. Mix the spinach and quinoa to spread the dressing.

Step 5. Add the chopped cucumber, blackberries, blueberries, and almonds. Enjoy!

  • 4 Cups Spinach
  • 1 Cup Cooked Quinoa (about 2/3 cup dry)
  • 1 Medium Cucumber, chopped
  • 1/2 Cup Blueberries
  • 1/4 Cup Blackberries
  • 1/4 Cup Sliced Almonds

Sweet Dijon Balsamic Dressing

  • 3 Tablespoons Balsamic Vinegar
  • 3 Tablespoons Water
  • 3 Tablespoons Dijon Mustard
  • 2 Tablespoons Date Syrup
  • 2 Cloves Garlic, minced

Instructions

thank you for the oil free recipe. I'm getting introduced to wild Bolete mushrooms here in Colorado, and everyone sautes Bolete's in butter or olive oil. I'm on a veggie, oil free regimen for heart health reasons. and your recipe suggestion may fill the bill. I can't wait to give it a try.
