Coconut Curry Granola

Coconut Curry Granola is a spicy, sweet treat. It's crunchy and delicious. Made with ONLY 5 simple whole food plant-based ingredients!

Do you cook with curry powder?

I find that some people love it and some people hate it. Personally, I'm team love it!

Curry powder is a sweet and savory spice mix. It has spices like cinnamon, cumin, coriander, ginger, and turmeric.

Traditionally you use curry powder in curries. (Shocker, right?) But I've been dreaming about curry powder mixed with sweet foods. Because of the sweet spices like cinnamon and ginger, curry spice can work very well in sweet recipes.

Don't knock it till you've tried it!

Speaking as someone who has tried it, I love it! I even have a coconut curry muffin recipe in the works that I'll hopefully be sharing soon. But today we're talking granola!

I've probably ranted about store-bought granola before, but I'm going to do it again...

Most (if not all) store-bought granola brands advertise as health foods. They claim that they are high in fiber and rich in vitamins. This might be true, but store-bought granolas are filled with oil and sugar.

This isn't healthy! The granola companies are trying to hide behind the health benefits of oats, chia seeds, or whatever else they put in their products. What they fail to tell you is that they are loading you up with unhealthy foods.

It's so easy to think of store-bought granola as a health food, but it really isn't. Granola CAN be a healthy food if you use good ingredients that will nourish your body.

It might take a little extra time, but it's worth it for your health. Especially if you're going to be snacking on granola on the reg (like me!).

This Coconut Curry Granola is a great example of a truly healthy snack. It isn't loaded with oil and sugar. Instead, it uses only a few healthy ingredients that you can feel GOOD about putting in your body.

Coconut Curry Granola

Ingredients

  • Rolled Oats: Of course, the base of any granola is oats. You'll want to use rolled oats so you can create large, delicious clusters!
  • Curry Powder: I used a curry powder mix, but if you don't have a pre-made mix, you can simply add the individual spices. Find a recipe here.
  • Date Syrup and Maple Syrup: In most of my granola recipes I use only date syrup, but I think the maple syrup adds a sweetness that pairs better with the coconut and curry flavors. I used a combination of both in this recipe. That said, using only date syrup is the healthiest option with the most blood-sugar-stabilizing fiber.
  • Coconut Flakes: I used shredded coconut for this recipe. But flaked coconut would work well too! Make sure to buy unsweetened coconut.

Coconut Curry Granola

How to make Coconut Curry Granola

Start by preheating the oven and lining a baking sheet with parchment paper. The parchment paper prevents sticking - we want the granola to stick to itself, not the pan.

Next, mix the oats and curry powder. Then add the date syrup and/or maple syrup. Coat the oats completely.

You'll notice that in the recipe I have a range of syrup quantities. If you want a sweeter granola and more clusters, use the larger amount. If you're okay with a few clusters and want a less sugary version, use the smaller amount. I encourage you to play around with it and find a balance that you love.

After you mix in the syrups, stir in the coconut flakes.

Then spread the mixture evenly on the baking sheet and bake for 20 minutes.

Remove the granola from the oven and let cool completely on the pan. This is what creates the clusters! DO NOT SKIP THIS STEP.

When the granola is cool, break it into clusters. Sprinkle with additional coconut flakes if you prefer. Enjoy!

Ingredients

  • 2 Cups Rolled Oats
  • 1 Tablespoon Curry Powder
  • 3-4 Tablespoons Date Syrup*
  • 3-4 Tablespoons Maple Syrup*
  • 1/4 Cup Coconut Flakes

Instructions

  1. Preheat the oven to 350. Line a baking sheet with parchment paper.
  2. In a medium bowl, mix the oats and curry powder.
  3. Add the date syrup and maple syrup. Coat the oats completely.
  4. Stir in the coconut flakes.
  5. Spread evenly on the baking sheet. Bake for 20 minutes.
  6. Remove the granola from the oven and let cool completely on the pan. This is what creates the clusters. When the granola is cool, break into clusters and enjoy!

Recipe Notes

*You can use all date syrup or all maple syrup. I prefer a combination for maximum flavor and clusters. Use the higher quantity of syrup for more clusters and sweetness.

thank you for the oil free recipe. I'm getting introduced to wild Bolete mushrooms here in Colorado, and everyone sautes Bolete's in butter or olive oil. I'm on a veggie, oil free regimen for heart health reasons. and your recipe suggestion may fill the bill. I can't wait to give it a try.
