Crispy Baked Tempeh

Crispy Baked Tempeh is marinated in a simple, spice-filled sauce and baked to a crispy perfection in the oven for a protein rich dinner.

Have you heard of tempeh before? For those who haven't, tempeh is traditionally made from fermented soybeans (though it can be made from any type of bean). It looks like a block of beans stuck together.

Tempeh Benefits

Tempeh is so good for you. First, it's fermented. Fermented foods are probiotics that feed our gut bacteria. They help good bacteria grow and keep our entire microbiome in balance.

Second, tempeh (the kind we're using) is made of soybeans. There is a lot of controversy over soy. Is it good? Is it bad? Well, the evidence suggests that soy is not just good, it's great for us. Soy can decrease breast cancer risk. It also lowers your risk of getting high blood pressure. (See the book How Not to Die for more information.)

Finally, legumes like soy are so healthy that the American Institute for Cancer research suggests that we be eating beans with every meal. With this recipe, you'll have no problem getting in those beans!

This Crispy Baked Tempeh was one of my go-to recipes before I went plant-based. I'm excited to finally share it with you guys! Tempeh is full of plant-protein -- it's great to eat regularly if you want to build muscle or are watching  your protein intake.

Plus, Crispy Baked Tempeh is a versatile recipe. If you don't have all the ingredients for the marinade, no problem. Just use what you have or make up your own.

How to make Crispy Baked Tempeh

To make this tempeh, start with the marinade. Mix up all the marinade ingredients: balsamic vinegar, vegetable broth, salt, garlic powder, onion powder, cumin, thyme,  and smoked paprika. Then slice the tempeh. Pour the marinade over the sliced tempeh and allow to sit for at least 4 hours. I like to make the marinade the night before I make this and let it sit overnight. This helps the tempeh absorb maximum flavor!

When you're ready to bake the tempeh, line a baking sheet with aluminum foil so the tempeh doesn't stick. Then arrange the tempeh on the baking sheet so the slices aren't touching.

Then, bake for 35 minutes, flipping after 20 minutes. Remove from the oven and enjoy your delicious Crispy Baked Tempeh!

  • 1 Block Tempeh

Tempeh Marinade

  • 1/2 Cup Balsamic Vinegar
  • 1/2 Cup Vegetable Broth
  • 1 Teaspoon Salt
  • 1 Teaspoon Garlic Powder
  • 1 Teaspoon Onion Powder
  • 1/2 Teaspoon Cumin
  • 1/2 Teaspoon Thyme
  • 1/2 Teaspoon Smoked Paprika


  1. Slice the tempeh into thin strips (as shown above). Mix the marinade ingredients together. Cover the tempeh with the marinade and let sit at least 4 hours, preferably overnight.
  2. Preheat the oven to 400. Line a baking sheet with aluminum foil. Place the strips of tempeh on the baking sheet making sure they do not overlap. Bake for 35 minutes, flipping each strip of tempeh over after 20 minutes. Enjoy!

thank you for the oil free recipe. I'm getting introduced to wild Bolete mushrooms here in Colorado, and everyone sautes Bolete's in butter or olive oil. I'm on a veggie, oil free regimen for heart health reasons. and your recipe suggestion may fill the bill. I can't wait to give it a try.
