Are you a big milk drinker? If you're anything like me, you drink milk ALL THE TIME (non-dairy milk, of course). I pour milk in my turmeric lattes, use it when I make oatmeal, add it to nice cream, or just drink it by the glass! It's delicious!!

I used to go through carton after carton of almond or flax milk each week. But I recently found out that I might be intolerant to the chemicals and additives that milk manufacturers add to their plant milks. Yikes!

The additives in store-bought milk make my stomach hurt but I didn't want to give up drinking milk altogether. So what's a girl to do?! Make her own milk of course!

Easy Homemade Coconut Milk

I've experimented with almond milk and oat milk in the past, but honestly, I found them frustrating and messy. You have to soak the almonds or oats, drain them, blend them, strain them, clean the nut milk bag, ... too many steps. I needed something sustainable. Something that I could make regularly and easily. Then I had an idea: coconut milk!

You can buy coconut milk in a can. If you buy the right brand it has no additives. If you want, you could just drink the coconut milk from the can. It's delicious! But it's pretty high in fat. Now don't get me wrong, I 100% support eating healthy fats. But I drink milk so often that I wanted something lighter that wouldn't be super filling when I drink it multiple times a day. So I decided to mix it with some water to create a lighter version.

Yes, you just read that correctly. All you need to do to make this Easy Homemade Coconut Milk is to mix it with water. (That's why it's called easy.)

I almost feel guilty about sharing such a simple recipe. I mean it doesn't get much more basic than mixing coconut milk and water. But it's too delicious not to share. And it has NO added chemicals. The ingredients are literally coconut and water. That's it. No terrible ingredients that will upset your digestive system. No chemicals. Just real ingredients.

How can you use homemade coconut milk? Exactly how you would use any store bought plant-based milk: with cookies, in nice cream cake, as a coffee creamer, in soup, with oats. You name it!

Ingredients

  • 1/4 Cup Canned Coconut Milk, check the ingredients – there should only be coconut milk and water
  • 1 3/4 Cup Water
  • 1/2 Teaspoon Vanilla Extract, optional

Instructions

  1. Pour the coconut milk, water, and vanilla extract into a mason jar or other container with a lid. Shake the ingredients until they mix thoroughly. Refrigerate and shake before each use. Enjoy!

thank you for the oil free recipe. I'm getting introduced to wild Bolete mushrooms here in Colorado, and everyone sautes Bolete's in butter or olive oil. I'm on a veggie, oil free regimen for heart health reasons. and your recipe suggestion may fill the bill. I can't wait to give it a try.
