Edamame Peanut Lettuce Wraps

For all my fellow peanut butter obsessed humans, I've got another good one! These delicious wraps are packed with peanut flavor. And you get full servings of both veggies and protein.

I was inspired to make these wraps from a meal prep photo shoot I did a few months ago. It made me think about how often we're on the go or, even if we're not, just want something that's really easy to put together right before you want to eat.

These wraps can be eaten warm or cold. And the recipe yields several servings, so you can easily make this on the weekend and have lunch all week. Plus, it's kind of a like a buffet type dish - you can prep the filling and make yourself as many little wraps as you're hungry for.

Edamame Peanut Lettuce Wraps

Ingredients

  • Edamame: You should be able to find this in the frozen vegetable section of the grocery store.
  • Vegetables: Red Onion, Green Bell Peppers, Cucumber
  • Butter Lettuce: To hold the veggies.
  • Peanuts: for topping.

Peanut Sauce

  • Liquid Aminos: You could also use tamari or soy sauce.
  • Rice Vinegar: For a bit of tang.
  • Peanut Butter: I love using chunky pb for extra bits of peanut.
  • Powdered Peanuts: You could also sub with additional peanut butter.
  • Date or Maple Syrup: For some sweetness.
  • Sriracha: For a kick of spice.
  • Spices: Onion powder & garlic powder.

Edamame Peanut Lettuce Wraps

How to make Edamame Peanut Lettuce Wraps

Step 1. Finely dice the bell peppers, onion, and cucumber.

Step 2. Add the edamame, bell pepper, and onion to a non-stick pan. Cook on medium heat until the edamame is warmed through and the peppers and onion are soft.

Step 3. Remove from the heat and stir in the cucumber.

Step 4. Mix the sauce ingredients in a small bowl.

Step 5. Pour the sauce into the edamame mixture. Stir to coat.

Step 6. To assemble, place a scoop of the edamame mixture into a leaf of lettuce. Top with peanuts. Enjoy!

Ingredients

  • 1 1/2 Cups Frozen Edamame
  • 1/2 Red Onion
  • 2 Medium Green Bell Peppers

thank you for the oil free recipe. I'm getting introduced to wild Bolete mushrooms here in Colorado, and everyone sautes Bolete's in butter or olive oil. I'm on a veggie, oil free regimen for heart health reasons. and your recipe suggestion may fill the bill. I can't wait to give it a try.
