Gingerbread Almonds

Covered in sticky molasses and sprinkled with gingerbread spices, these Gingerbread Almonds are the perfect (healthy) holiday snack.

Am I the only one who loves to snack on nuts? Seriously, nuts and nut butter are some of my favorite foods. I love how nutrient dense nuts are. They are filled with healthy fats and essential vitamins.

I sometimes get bored of just plain nuts though. So I like to invent new flavors. Some of my favorites are my Roasted Cashews (3 Ways!) and my Cinnamon Candied Pecans. These Gingerbread Almonds may just become my new favorite.

Gingerbread is a classic Christmas flavor -- sweet and sticky molasses with potent ginger, YUM. Of course, I wanted to keep all the gingerbread goodness and leave out all the bad stuff that gingerbread recipes traditionally contain. So when developing this recipe I used the basic gingerbread flavors and said "see ya" to all the rest.

I made these Gingerbread Almonds with a similar recipe to the Cinnamon Candied Pecan recipe I mentioned above. I love the pecan recipe so I knew these almonds would turn out delicious too!

How to make Gingerbread Almonds

To make these yummy almond snacks, start with some raw, unsalted almonds. You can find raw almonds almost anywhere -- just double check to make sure they are raw and have no salt or oil added.

Mix in unsulphured molasses, date syrup, and gingerbread spice. Then just pop 'em in the oven for 15 minutes and voila, you have delicious Gingerbread Almonds!!

You may be able to buy gingerbread spice in the store, but it's simple to make. You likely have all the spices you need in your spice drawer. Just mix ginger, cinnamon, allspice, nutmeg, and cloves and you'll have your own stash of gingerbread spice to fulfill all your baking needs!

I hope you enjoy these quick, delicious, and Christmas-themed Gingerbread Almonds!

thank you for the oil free recipe. I'm getting introduced to wild Bolete mushrooms here in Colorado, and everyone sautes Bolete's in butter or olive oil. I'm on a veggie, oil free regimen for heart health reasons. and your recipe suggestion may fill the bill. I can't wait to give it a try.
