Kiwi Apple Spinach Salad

Kiwi Apple Spinach Salad is a light, fruity dish that's perfect for warm weather. Fill your bowl with healthy fruits and vegetables!

What do you do when your roommate buys a bunch of kiwis and they are all starting to go bad? Google ALL the things you can make with kiwis.

Turns out there are a variety of kiwi recipes on the internet. I saw lots of kiwi smoothies and ice creams. I also came across a few kiwi cocktails that I'll be putting on my list of drinks to try.

In my searching I came across a some salads that had kiwis, so I was inspired to make my own. I love the idea of mixing fruits and vegetables in salads, so that's what I did.

I also added some nuts for proper nutrient absorption. Fats help your body process all the vitamins in the greens!

This Kiwi Apple Spinach Salad is absolutely beautiful in my opinion. There are so many different colors that make the dish feel so vibrant and springy. Plus, the sweetness from the kiwis and apples make for a completely different vibe than a traditional salad.

Kiwi Apple Spinach Salad Ingredients

  • Fresh Spinach: The base of this salad. Spinach has so many good-for-you vitamins and minerals.
  • Fuji Apples: You can use any kind of sweet apple you have. Apples add crunch and sweetness.
  • Kiwis: The actual star of this dish. Kiwis have a sweet, yet citrusy taste that ties everything in the salad together.
  • Corn Kernels: I love the pop of yellow that the corn gives. It is slightly sweet but also brings a savory flair to the salad.
  • Sliced Red Onion: Onion adds another color to the salad and the slight bite adds an edge.
  • Slivered Almonds: Like I mentioned earlier, fat enables nutrient absorption. Plus the almonds add another fun layer to the salad.

For the dressing we'll simply mix some balsamic vinegar with maple syrup. This creates a delicious, tangy-sweet dressing.

How to make Kiwi Apple Spinach Salad

Step 1. Slice the apples into thin wedges. Peel the kiwis and slice them into discs.

Step 2. Divide all the salad ingredients evenly into four bowls.

Step 3. In a separate bowl, combine the balsamic vinegar and maple syrup. Dress each salad as desired. Enjoy!

Ingredients

Salad

  • 8 Ounces Fresh Spinach
  • 2 Large Fuji Apples
  • 2 Kiwis
  • 1/2 Cup Corn Kernels
  • 1/4 Cup Sliced Red Onion
  • 1/4 Cup Slivered Almonds

Dressing

  • 1/4 Cup Balsamic Vinegar
  • 2 Tablespoons Maple Syrup

thank you for the oil free recipe. I'm getting introduced to wild Bolete mushrooms here in Colorado, and everyone sautes Bolete's in butter or olive oil. I'm on a veggie, oil free regimen for heart health reasons. and your recipe suggestion may fill the bill. I can't wait to give it a try.
