Mocha Chip Almonds

Sweet, crunchy, covered in coffee and chocolate, these Mocha Chip Almonds make a delicious and healthy sweet treat. Made with only three ingredients!

Friends, I have a delicious little snack for you today! Mocha Chip Almonds! Like chocolate covered almonds, but better. Because coffee. Everything is always better with coffee. Can you tell I love coffee?

Anyways... These Mocha Chip Almonds came about in such a random way. I was brainstorming foods to make and I didn't have any genius ideas. So I looked at a running list I keep of recipe ideas I'd like to try. On my list I had chocolate covered peanuts. I was thinking maybe something like peanut M&Ms but healthy.

Chocolate covered peanuts are nice and all, but I wanted to be a bit more creative. So I started looking through my kitchen. I remembered these Mocha Chip Cookies and realized that the coffee + chocolate combination is amazing! Peanuts don't really go with the mocha flavor. BUT almonds do!

Luckily I always have some raw almonds in my freezer. So I pulled them out and these delicious creations were born.

They key to the mocha chip flavor is espresso powder. Get yourself a quality espresso powder and keep it in your freezer for unplanned espresso needs. That's what I do. And look what happened: Mocha Chip Almonds.

How to make Mocha Chip Almonds

These Mocha Chip Almonds are very easy to make. So assuming you have all the ingredients, you can easily whip these up and be devouring them in 15 minutes.

First, melt the chocolate. You could be all fancy and make a double boiler, but honestly the microwave works just fine. Make sure to microwave on half power and stir the chocolate every 30 seconds or so. The last thing you want is burnt chocolate!

Once your chocolate is melted and smooth, mix in the espresso powder. The amount of espresso powder I suggest below gives a lovely hint of coffee, but if you're a huge coffee lover you may want to up the espresso. Just don't use too much or your chocolate won't be sticky enough to mold to the almonds.

Now comes the fun/messy part. Coat the almonds in the chocolate espresso mixture. I did my almonds one by one. I dropped an almond into the chocolate and used a spoon to cover it in chocolate. If you want clusters, you can do multiple almonds at once. Transfer each almond to a piece of parchment paper to let the chocolate harden.

When you've coated all the almonds in chocolate, move the entire piece of parchment paper to the freezer and let the almonds freeze for a couple minutes so the chocolate is completely set. Then remove from the freezer and enjoy!

Ingredients

  • 3 ounces Unsweetened Chocolate*
  • 1 Tablespoon Espresso Powder
  • 1/2 Cup Almonds

Instructions

  1. Microwave the chocolate on half power in 30 second increments. Stir between increments to avoid overheating the chocolate. Mix in the espresso powder.
  2. Using a spoon, dip the almonds into the chocolate. Place them on a sheet of parchment paper to cool. Allow them to set – you can speed up this process by putting them in the refrigerator or freezer. Enjoy!

*If you would like a sweeter treat replace some of the unsweetened chocolate with a dark or semi-sweet vegan chocolate.

thank you for the oil free recipe. I'm getting introduced to wild Bolete mushrooms here in Colorado, and everyone sautes Bolete's in butter or olive oil. I'm on a veggie, oil free regimen for heart health reasons. and your recipe suggestion may fill the bill. I can't wait to give it a try.
