Before I started eating a plant-based diet, I ate eggs for breakfast almost every day. I loved it! I enjoyed eating so much protein right after my workout.

Soon after I went vegan, I realized how awful eggs made me feel. I used to get terrible stomach aches after breakfast. I didn't think much of it, until I started eating oatmeal and my stomach aches completely disappeared!

Oatmeal quickly became my go-to breakfast. Eating a Blueberry Orange Oatmeal Bowl is amazing. But every so often, I missed my egg breakfast.

I've seen recipes for tofu scrambles before, but I never tried one. For some reason, I thought the recipes looked difficult. I didn't want to mess up. Sometimes I'm too much of a perfectionist for my own good.

Well, a few weeks ago, after making these Blueberry Maple Overnight Oats I had some leftover tofu. I didn't want to let it go to waste, so I decided, why not? The worst thing that could happen is that I mess up. And that wouldn't be any worse than just letting it go to waste.

I threw some ingredients together. And out came this incredible tofu scramble.

I know a lot of food bloggers plan and test their recipes over and over again before they publish them. And I do my fair share of that, but I love creating recipes for you guys that don't require a lot of perfection. I want cooking plant-based meals to be easy for you.

This Oil-Free Vegan Tofu Scramble is one of those no-effort, no-mistakes kind of recipes.

The ingredient list is a little longer than my usual recipes, but it's completely customizable to your tastes. Or to whatever ingredients you have. Let's get into it!

Oil-Free Vegan Tofu Scramble Ingredients

  • Medium-Firm Tofu: The tofu creates a delicious scrambled-egg-like texture.
  • Bell Pepper, Mushrooms, Onion, Garlic: Or whatever your favorite vegetables are!
  • Spices: Garlic Powder, Onion Powder, Cumin, Paprika, Turmeric, Smoked Paprika, Cayenne, Salt, & Pepper: A delicious combination of spices. If you don't have something, don't worry. Just use what you have.

Oil-Free Vegan Tofu Scramble

How to make Oil-Free Vegan Tofu Scramble

Step 1. In a small bowl, mash the tofu with a fork. Set it aside while you prep the vegetables.

Step 2. Slice the bell pepper and mushrooms. Chop the onion. Mince the garlic.

Step 3. Heat a few tablespoons of vegetable broth in a pan. Add the peppers, mushrooms, onion, and garlic. Saute until soft. Use more veggie broth as needed to prevent sticking.

Step 4. Add the crumbled tofu and the remaining spices and seasonings to the pan. Cook until the tofu is warmed through.

Step 5. Divide evenly onto two plates. Serve and enjoy!

Ingredients

  • 1 Block Medium-Firm Tofu
  • 1 Medium Bell Pepper
  • 4 Ounces Mushrooms
  • 1/2 Red Onion
  • 1 Clove Garlic
  • 1 1/2 Teaspoon Garlic Powder
  • 1 Teaspoon Onion Powder
  • 1/2 Teaspoon Cumin
  • 1/2 Teaspoon Paprika
  • 1/2 Teaspoon Turmeric
  • 1/4 Teaspoon Smoked Paprika
  • 1/8 Teaspoon Cayenne
  • Salt & Pepper, to taste
  • 2-4 Tablespoons Vegetable Broth, for cooking

Instructions

thank you for the oil free recipe. I'm getting introduced to wild Bolete mushrooms here in Colorado, and everyone sautes Bolete's in butter or olive oil. I'm on a veggie, oil free regimen for heart health reasons. and your recipe suggestion may fill the bill. I can't wait to give it a try.
