Peanut Butter Banana Breakfast Bars

Just reading the name of these bars makes my mouth water. One of my FAVORITE food combinations is peanut butter and banana. My go-to dessert is frozen bananas with peanut butter drizzled on top. Wow, so delicious.

One evening, while enjoying my delicious peanut butter banana dessert, I was wondering why on earth I can't eat this peanut butter banana combination for breakfast. I realized that I hadn't made breakfast bars since I shared my Raw Apple Pie Granola Bars a while ago. So I thought, why not? Peanut Butter Banana Breakfast Bars. Yum!

I picked up some dry roasted peanuts from the store and started throwing things into my food processor. Peanuts, dates, rolled oats, peanut powder, a banana, and some sea salt. Besides the peanuts, these are all foods I keep in my apartment. The simple ingredient list makes it easy to throw together these bars whenever you feel like it.

These bars came together with minimal testing -- my favorite kind of creation! I love when I can enjoy the first batch of a recipe I'm testing. That also means I get to send the recipe your way even faster. It's a win-win!

How to make Peanut Butter Banana Breakfast Bars

To make these delicious bars, get your food processor ready! Throw in the ingredients I mentioned above: dates, peanuts, rolled oats, peanut powder, a banana, and sea salt. Pulse for a minute or two, until the mixture sticks together in a clump.

Then, press the mixture into a square baking pan. I lined mine with parchment paper because I don't like doing dishes. But you don't have to! Set the pan in the freezer for 15 minutes. You could skip this step if you're dying for peanut butter banana flavors. (I won't judge.) The freezer will make the bars easier to handle and make less of a sticky mess when you cut them.

Once the 15 minutes are up, take the pan out of the freezer and slice the mixture into bars. I decided to slice mine into 12 bars. You could do 16 squares or 8 larger bars. Whatever you're feeling!

Store these delicious Peanut Butter Banana Breakfast Bars in the fridge or freezer. Because we put a raw banana in there, they will go bad quickly if they sit out on the counter. Simply pull out a bar whenever you need breakfast on the run or if you want a sweet snack. Enjoy!

Ingredients

  • 1 Cup Medjool Dates, pitted
  • 1 Cup Peanuts
  • 1 Medium Banana
  • 1/2 Cup Rolled Oats
  • 1/2 Cup Peanut Powder
  • 1/2 Teaspoon Sea Salt

Instructions

  1. Pulse all ingredients in a food processor until they mixture starts to stick together. Press into a square baking pan. Freeze for 15 minutes before slicing. Enjoy!

Recipe Notes

Because these bars have a raw banana, I advise storing them in the fridge or freezer.

thank you for the oil free recipe. I'm getting introduced to wild Bolete mushrooms here in Colorado, and everyone sautes Bolete's in butter or olive oil. I'm on a veggie, oil free regimen for heart health reasons. and your recipe suggestion may fill the bill. I can't wait to give it a try.
