Plant-Based Air Fryer Peach Crisp

Enjoy the fresh, ripe summer peaches with this delicious and incredibly easy crisp. All it takes is a couple ingredients to create a sweet, crisp topping for your perfect summer peaches.

This entire crisp is made with whole food plant-based ingredients. The peaches get covered with date syrup or maple syrup for a sweet, juicy fruit layer.

Then the fruit is topped with a simple crumble layer made from oats, date sugar, tahini, and cinnamon. It's the perfect amount of sweetness, saltiness, fat, and flavor!

Bake everything in the oven or air fryer and you've got yourself a quick and easy summer dessert.

Do I have to use an air fryer?

Nope! I used my air fryer because it came with an amazing baking dish, perfect for a recipe like this. And the air fryer cooks food quicker than an oven.

But you can easily make this crisp and bake in the oven. Either method is perfect.

Filling

  • Peaches: This recipe is great for using up ripe peaches. But if your peaches aren't ripe you can still make this - you'll get tons of sweetness from the other ingredients.
  • Date Syrup or Maple Syrup: To add just a touch of sweetness to the already sweet peaches. The goal of the additional syrup is to create a sweet, juicy bottom layer.
  • Lemon Juice: A bit of acid keeps the peaches tasting fresh.
  • Vanilla Extract: For a hint of vanilla flavor.
  • Cornstarch: To help the syrupy mixture thicken.
  • Salt: To enhance the sweet flavors.

Topping

  • Rolled Oats: Oats are the bulk of the crisp. Buy rolled oats for a super crumbly topping.
  • Date Sugar: For some sweetness in the crisp layer.
  • Oat Flour: Oat flour helps the oats stick together into one layer. If we didn't add flour we'd be making granola, not a  cohesive crisp.
  • Cinnamon: For a bit of warmth and sweetness to the crispy top.
  • Sea Salt: To enhance the flavors.
  • Tahini: Traditional crisps use butter to create the topping. A great whole food substitution is tahini - it's high in fat and pretty neutral in flavor.

How to make Plant-Based Air Fryer Peach Crisp

Step 1. Add all the filling ingredients in a bowl and stir to combine.

Step 2. Line a baking pan or pan from your air fryer with aluminum foil. Pour the peach mixture into the pan and set aside.

Step 3. In a separate bowl, combine all the topping ingredients. You should be able to squeeze the mixture to form chunks.

Step 4. Spread the topping evenly over the peach mixture.

Step 5. Cover the pan with aluminum foil. Bake at 350 for 20 minutes. Enjoy with ice cream!

  • 1/4 Cup Date Syrup or Maple Syrup

thank you for the oil free recipe. I'm getting introduced to wild Bolete mushrooms here in Colorado, and everyone sautes Bolete's in butter or olive oil. I'm on a veggie, oil free regimen for heart health reasons. and your recipe suggestion may fill the bill. I can't wait to give it a try.
