This tasty salad is putting me one step closer to my mission of proving that plant-based food is incredibly exciting. I think many people are stuck on the idea that plant-based eating is boring. The image of a bland plate of lettuce comes to mind... but that couldn't be further from the truth!

There are SO many foods to eat on a plant-based diet. And even 'normal' foods can be transformed into a work of art. This beautiful salad has only a few simple ingredients but it is rich and vibrant.

Recipe Features

Creamy Garlic Turmeric Dressing

Ingredients

  • Kale: This recipe works perfectly with baby kale. You can also use arugula.
  • Fresh Raspberries: Raspberries add little pops of color and sweetness.
  • Walnuts: I used a mixture of red walnut and regular walnuts. You can use whatever you have.
  • Chickpeas: Canned chickpeas are your friend. Just choose a low-sodium option.

Creamy Garlic Turmeric Dressing Ingredients

  • Chickpeas: Blended chickpeas create the smoothest, creamiest dressing. And they have protein and fiber!
  • Aquafaba: Aquafaba is perfect to thin out this dressing and bring it to the correct consistency.
  • Garlic: Garlic adds a sharp tang. If you don't love a strong garlic flavor, decrease the amount of garlic you use.
  • Spices: turmeric, salt, and black pepper.

How to make a Raspberry Walnut Kale Salad

Step 1. Make the dressing. Add the chickpeas, aquafaba, garlic, turmeric, salt and pepper to a food processor. Blend until smooth and creamy.

Step 2. Assemble the salads. Add a bed of kale to a bowl. Top with fresh raspberries, walnuts, and chickpeas. Drizzle with the dressing and enjoy!

  • 1/2 Cup Chickpeas
  • 1/2 Cup Aquafaba
  • 4 Cloves Garlic
  • 1 Teaspoon Turmeric
  • 1 Teaspoon Salt
  • Black Pepper, to serve

Instructions

  1. Make the dressing. Add the chickpeas, aquafaba, garlic, turmeric, salt and pepper to a food processor. Blend until smooth and creamy.

thank you for the oil free recipe. I'm getting introduced to wild Bolete mushrooms here in Colorado, and everyone sautes Bolete's in butter or olive oil. I'm on a veggie, oil free regimen for heart health reasons. and your recipe suggestion may fill the bill. I can't wait to give it a try.
