Red Lentil Tacos

Spiced with delicious taco seasonings, these Red Lentil Tacos are a healthy alternative to taco meat, made with only a few simple ingredients.

Are you in a healthy recipe slump between Thanksgiving and Christmas, if so, look no further than Red Lentil Tacos. If not, still check them out :) These gems are delicious and are super easy to make. A perfect change of pace from all the holiday foods.

This recipe sort of came up as an accident. I was cooking red lentils for myself and I realized that I cooked them to a taco-like texture. I added some taco seasonings and Red Lentil Tacos were born.

How to make Red Lentil Tacos

To make these tacos, start with -- you guessed it -- red lentils. Lentils are so easy to cook. You don't need to soak them like other beans and they cook extremely quickly. All you need to do is add the lentils and some water to a pot and simmer for 15 minutes.

Red lentils cook quicker than green or brown lentils, so watch them carefully towards the end to ensure you don't end up with a bunch of mush. To make these taco-like make sure there are still some intact beans.

After the lentils are done, drain them. Then mix in your spices. I used a mix of the spices I had on hand -- this makes the tacos as fresh and tasty as possible. If you have a taco seasoning you like, or prefer to buy seasoning packs/mixes, you do you. If you need to be 100% gluten free, be sure to make sure that whatever seasoning you choose is certified gf.

To make up the taco seasoning flavors, I used chili powder, garlic powder, onion powder, red pepper flakes, smoked paprika, cumin, and salt. If you're not a fan of lots of spice, feel free to omit the red pepper flakes and/or the chili powder. I find though, that when you eat these in a tortilla, the spice is completely manageable.

Serve Red Lentil Tacos in a corn or flour tortilla. Top with your favorite taco fixings. Personally, I love a simple taco so I don't add a ton of toppings. You can go crazy though. Add tomatoes, lettuce, onions, non-dairy cheese, non-dairy sour cream, jalapeno peppers, avocado or anything you love. Enjoy!

thank you for the oil free recipe. I'm getting introduced to wild Bolete mushrooms here in Colorado, and everyone sautes Bolete's in butter or olive oil. I'm on a veggie, oil free regimen for heart health reasons. and your recipe suggestion may fill the bill. I can't wait to give it a try.
