Broccoli and cauliflower are two popular vegetables, but many people have horrifying memories of mushy broccoli and bland cauliflower. All that's about to change.

Before we get to the recipe, I want to talk about the health benefits of these veggies.

Nutrition

Both broccoli and cauliflower are in the cruciferous family. Cruciferous veggies like broccoli, cauliflower, kale, or cabbage have some amazing gut-healing and inflammation-fighting properties.

These vegetables contain a phytonutrient that leads to the activation of our immune system. Every time you eat broccoli and cauliflower you promote the unlocking of your immune defense.

The antioxidants present in broccoli and cauliflower also provide cancer-fighting properties.

If that wasn't enough for you, broccoli and cauliflower are filled with vitamins and minerals. Broccoli has vitamins E, A, C, K, and B6. It also contains folate, potassium, manganese, calcium, iron, magnesium, phosphorus, and selenium. Cauliflower packs in vitamins C, K, and B6. Plus folate, potassium, pantothenic acid, choline, omega-3s, and more!

Plus broccoli and cauliflower are filled with fiber, one of the most important nutrients for your health.

Roasted Broccoli and Cauliflower

How to Make Roasted Broccoli and Cauliflower

First chop your broccoli and cauliflower into bite-sized pieces. Rinse the veggies in a colander. This step is key because we're not using oil. You'll want the veggies to be slightly moist in the oven so they don't burn.

Dry the broccoli and cauliflower and then place on baking sheets. Then, slice your garlic into thin slices. Sprinkle the garlic over the broccoli and cauliflower. Add salt, pepper, and red pepper flakes.

Then place in the oven and wait for your veg to get crispy and delicious.

When the veggies are finished, remove them from the oven, and enjoy your superfood roasted broccoli and cauliflower!

Ingredients

  • 3 Broccoli Crowns
  • 1 Head Cauliflower
  • 4 Cloves Garlic
  • 2 Teaspoons Red Pepper Flakes
  • Salt
  • Pepper

Instructions

  1. Preheat the oven to 400.
  2. Chop the broccoli crowns and cauliflower head into bite-sized pieces and thinly slice the garlic cloves.
  3. Rinse the chopped broccoli and cauliflower under cold water. Pat dry, leaving the veggies slightly damp but not wet.
  4. Place the broccoli and cauliflower on separate baking sheets. Sprinkle the sliced garlic, red pepper flakes, salt, and pepper evenly over the broccoli and cauliflower. Toss lightly.
  5. Place the trays in the oven. Roast for 25 minutes (add 5 minutes for the cauliflower), stirring every 10 minutes to prevent sticking. Remove when the veggies are slightly browned. Enjoy!

Recipe Notes

If you notice your veggies aren’t browning, you did not dry them enough before roasting.

thank you for the oil free recipe. I'm getting introduced to wild Bolete mushrooms here in Colorado, and everyone sautes Bolete's in butter or olive oil. I'm on a veggie, oil free regimen for heart health reasons. and your recipe suggestion may fill the bill. I can't wait to give it a try.
