Roasted Cashews Three Ways

These three recipes are fun and adventurous. Roasted cashews are perfect for parties, snacking, and all kinds of cravings.

Cashews are second on my list of favorite nuts (yes, I have a list). Pecans are number one. But you've already enjoyed my roasted pecan recipe so it's time for a change of pace and new delicious roasted nut recipes to try.

I have three yummy flavor combinations for you today:

  • Salted Cashews
  • Cheesy Cashews
  • Caramelized Cashews

Wait, did she say "cheesy"? I thought this was a plant-based website...

You'll see.

What I love about these flavors is that you can enjoy them separately or mix them all together for a fun party mix. The best part though is that these nuts are healthy! There is absolutely no oil, added sugar, or animal products.

Let's jump in!

For all three flavors you'll need raw cashews. To help the toppings stick to the cashews and to remove the toxins in raw nuts, we'll soak the cashews in water while the oven is preheating.

Once they have soaked, drain them and mix in the appropriate topping.

Salted Cashews

  • add sea salt

This is exactly like my roasted pecan recipe. You can as much or as little salt as you want, to taste. While salt isn't the healthiest ingredient, enjoying in moderation won't hurt.

Cheesy Cashews

  • add nutritional yeast
  • add a small sprinkle of sea salt (optional)

What is nutritional yeast? Nutritional yeast is deactivated yeast. Don't run screaming. Nutritional yeast has a delicious cheesy flavor and is aptly named nutritional yeast because of its fortification with tons of vitamins and minerals. Plus, it's vegan!

Caramelized Cashews

Have you tried date syrup yet? It's so sweet and delicious. And the only ingredients are dates -- only natural sugar here! Dates are frequently used for caramel in plant-based recipes so why not let them caramelize on these cashews?

Once you mix in your toppings, place the cashews on baking sheets and roast them in the oven.

After 15-25 minutes, you'll have fund mix of roasted cashews waiting for you to devour.

Roasted Cashews Three Ways

  • 3 Cups Raw Cashews
  • Sea Salt, to taste
  • 2 Tablespoons Nutritional Yeast
  • 1 Tablespoon Date Syrup


  1. Preheat the oven to 350 degrees. While the oven is warming up, soak the cashews in water.
  2. When the oven is warm, drain the cashews.
  3. Separate the cashews into three bowls. In the first bowl, add sea salt, to taste. In the second bowl. Add the nutritional yeast and optional sea salt to taste. In the third bowl, add the date syrup. Mix well.
  4. Place on three separate baking sheets and roast for 15 minutes until lightly brown and fragrant. Stir every 5 minutes. Remove from the oven and enjoy!

Recipe Notes

The caramelized cashews may take 5-10 minutes longer than the salted and cheesy flavors. Wait until the date syrup is caramelized before removing from the oven. Let the cashews cool until the date syrup is set.

thank you for the oil free recipe. I'm getting introduced to wild Bolete mushrooms here in Colorado, and everyone sautes Bolete's in butter or olive oil. I'm on a veggie, oil free regimen for heart health reasons. and your recipe suggestion may fill the bill. I can't wait to give it a try.
