Roasted Japanese Sweet Potato Rounds

Have you tried Japanese sweet potatoes before? If not, please do.

What are Japanese Sweet Potatoes?

Japanese sweet potatoes are not like regular sweet potatoes. Yes, both are potatoes and both are sweet, but that's about where their similarities stop.

'Regular' sweet potatoes are orange inside with brownish skin. They are very fibrous and slightly sweet. Their flavor is mellow and neutral, good for combining with other flavors.

Japanese sweet potatoes, on the other hand, are light yellow inside and their skin is purple. These potatoes have an intense sweet flavor -- I've even seen a recipe for icing using Japanese sweet potatoes. They are not fibrous at all, instead their insides are gooey and creamy. In other words, they are amazing!

As a side note, I have nothing against regular sweet potatoes. Because of their bright orange insides, regular sweet potatoes likely have more antioxidants than Japanese. Regular sweet potatoes have their place, I often make this recipe with them.

I much prefer the Japanese sweet potatoes in this recipe. Because of their super sweet flavor, you don't need a sauce or dressing. They are so delicious eaten plain. But, you do you -- if you want to dip them in something, go for it! I suggest peanut butter.

How to make Roasted Japanese Sweet Potato Rounds

Cooking these Roasted Japanese Sweet Potato Rounds is so easy. The only thing you need to pay attention to is how thick you cut your slices. For the perfect amount of browning (aka flavor!!) you need to cut slices less than a centimeter thick.

I like to vary my slices slightly. When not all the slices are exactly the same, you'll end up with some that are really brown and some that are only browned slightly. I don't measure my slices, but they vary between 1/4 cm and 3/4 cm.

After you slice the potatoes, lay them out on a baking sheet. Bake for 40 minutes, flipping them halfway through. Then eat, and enjoy your Roasted Japanese Sweet Potato Rounds!

Recipe Prayer

God, thank you for naturally delicious food that is simple to make and easy to enjoy. You are so good. Amen.

thank you for the oil free recipe. I'm getting introduced to wild Bolete mushrooms here in Colorado, and everyone sautes Bolete's in butter or olive oil. I'm on a veggie, oil free regimen for heart health reasons. and your recipe suggestion may fill the bill. I can't wait to give it a try.
