Plant-Based Secret Squash Smoothie Bowl (Fruit-Sweetened)

This Secret Squash Smoothie Bowl is a bright, yellow drink! Made with whole foods, this smoothie has servings of both fruits and vegetables.

I'm soaking in what's left of summer with this fun smoothie bowl! This smoothie is great because it features a not-so-secret ingredient that is characteristic of summer: yellow squash.

Smoothies need to have two qualities to be good (at least in my opinion).

First, they need to taste good.

The whole point of smoothies is that you actually want to drink them. I could put a ton of healthy ingredients into a blender and blend them together, but it would taste disgusting. I want to enjoy the food that I eat.

Second, they need to be actually healthy.

While an unhealthy smoothie might taste good, the whole point of smoothies is that you actually want to drink them (notice a pattern?). I want to put good ingredients in my body, foods that will make me feel good and help my body function at its best.

So the goal with all of my smoothies is to make tasty AND nutritious drinks!

This Secret Squash Smoothie Bowl does just that. It's so delicious that unless you read the title of the recipe, you'd never know it has squash in it. You get all the nutrition and none of the veggie taste.

I have to say though, I do love squash. And if you want to cook some, I have several delicious recipes.

BUT if you want to hide your veggies, I've got you! Let's dive into this smoothie.

Ingredients

You'll note that this smoothie is a beautiful shade of yellow. To achieve this color, we're only using yellow ingredients.

If you want to get a variety of nutrients, be sure to eat the rainbow! Check out my red smoothie and my orange smoothie.

For this smoothie, yellow it is!

  • Frozen Pineapple Chunks: I bought a whole pineapple and cut it, and froze it. But it's just as easy to buy a frozen bag of pineapple.
  • Frozen Sliced Banana: ALWAYS keep frozen bananas on hand. They are so useful for baking, making ice cream, and of course smoothies!
  • Yellow Zucchini Squash: Summer is zucchini season so go grab your zucchini when it's fresh. Or grow your own!
  • Pineapple Juice: I used this pineapple juice. But if you don't have pineapple juice you could use another fruit juice like OJ, or water.
  • Oat Milk: This is optional, but it adds creaminess. If you want a super thick smoothie you could leave it out. Or if you don't have oat milk, use your favorite non-dairy milk.
  • Lemon Juice: Another yellow food for a hint of tang.

How to make a Secret Squash Smoothie Bowl

Smoothies are super easy! Just throw all the ingredients into a blender.

My only suggestion is to let the frozen fruit thaw slightly before you blend. This will make it easier on your blender. And it will make it a quicker process for you.

Step 1. Let your pineapple and banana thaw for a few minutes while you gather the other ingredients.

Step 2. Place all the ingredients in a blender or food processor. Blend until the mixture is smooth.

Step 3. Drink from a glass or pour into a bowl and top with banana, pineapple, oats, coconut, etc. Go crazy decorating your bowl with all the yellow foods. Enjoy!

Ingredients

  • 1 Cup Pineapple Chunks, frozen
  • 1 Sliced Banana, frozen
  • 1 Medium Yellow Zucchini Squash
  • 1/2 Cup Pineapple Juice
  • 1/4 Cup Oat Milk*
  • 2 Tablespoons Lemon Juice

Instructions

  1. Let the frozen pineapple and banana thaw for a few minutes. Then place all the ingredients in a blender or food processor. Blend until the mixture is smooth.
  2. Drink from a glass or pour into a bowl and top with banana, pineapple, oats, coconut, etc. Enjoy!

Recipe Notes

*You can use any non-diary milk you’d like. OR for a thicker smoothie, omit the milk entirely.

thank you for the oil free recipe. I'm getting introduced to wild Bolete mushrooms here in Colorado, and everyone sautes Bolete's in butter or olive oil. I'm on a veggie, oil free regimen for heart health reasons. and your recipe suggestion may fill the bill. I can't wait to give it a try.
