Spicy Corn Guacamole

Spicy Corn Guacamole is a refreshing dip, with a good kick of spice and an incredible texture. This plant-based guac is only five ingredients!

I used to not really love avocados. I understood the appeal of them: they have a buttery texture and can be paired with so many foods for an incredible flavor. But for whatever reason I never enjoyed them.

Until a few weeks ago.

Before all this quarantine stuff, I got together with some of my friends. Normally I make my own dips and such, but this was a last minute thing so we ran to the store and grabbed some party-foods, including guac. The guacamole we got was actually incredible.

My favorite part: there was corn in it. For some reason, this changed my perception on guac.

A week or two later, I saw ripe avocados on sale at the store and I got some in hopes of remaking the guac that I bought at the store. I grabbed a couple other simple ingredients and headed home to experiment.

Turns out, making good guacamole isn't actually that hard. It only takes a couple spices to whip up a delicious dip.

Spicy Corn Guacamole Ingredients

  • Avocados: If you are making the guacamole on the same day you buy the avocados, make sure to get soft, ripe avocados. If not, buy harder, less-ripe avocados and let them ripen at home.
  • Jalapeno Pepper: We'll use an entire pepper and most of the seeds for this recipe.
  • Cooked Corn Kernels: Frozen corn is your best bet here. Canned corn is often in a sugar water mixture, so to avoid added sugar, choose frozen. If you happen to have leftover corn on the cob, using that corn would be delicious!
  • Salt: A pinch of salt livens up the avocados.
  • Cayenne: The jalapeno will provide some spice, but in order for this guac to be truly spicy, cayenne is necessary. Plus, it adds a different type of spice than the jalapeno.

How to make Spicy Corn Guacamole

Step 1. Start by mashing the avocados. Then chop the jalapeno into small pieces - you want them to be pretty small so they aren't an overwhelming texture in the dip. Add the pepper and about half of its seeds to the avocado.

Step 2. Add the corn, salt, and cayenne to the avocados and jalapeno. Stir to combine. Taste and add more cayenne and/or salt if desired. Enjoy!

Ingredients

  • 2 Medium Avocados
  • 1 Jalapeno Pepper
  • 1/4 Cup Cooked Corn Kernels
  • 1/2 Teaspoon Salt
  • 1/4 – 1/2 Teaspoon Cayenne

Instructions

  1. In a medium bowl, mash the avocados.
  2. Chop the jalapeno into small pieces. Add the pepper and about half of its seeds to the avocado.
  3. Add the corn, salt, and cayenne to the avocados. Stir to combine. Taste and add more cayenne if desired. Enjoy!

thank you for the oil free recipe. I'm getting introduced to wild Bolete mushrooms here in Colorado, and everyone sautes Bolete's in butter or olive oil. I'm on a veggie, oil free regimen for heart health reasons. and your recipe suggestion may fill the bill. I can't wait to give it a try.
