Sugar-Free Coconut Chia Granola

Granola is one of my favorite snacks! I love that you can add in tons of healthy ingredients and still have an incredibly delicious snack. I have a huge sweet tooth, but I want to make sure that I'm snacking on good-for-you foods.

This granola has oats (of course), millet, another whole grain, coconut, chia seeds, and date syrup. So many good, whole foods, filled with vitamins and other nutrients. So good!

Sugar-Free Coconut Chia Granola

Ingredients

  • Rolled Oats: The classic granola base. Most oats are gluten-free, but if you need to you can buy certified gf oats.
  • Puffed Millet: I love adding a puffed grain to my granola because it adds another element of texture.
  • Shredded Coconut: Coconut has such a lovely sweet flavor. It reminds me of warm, tropical weather!
  • Chia Seeds: Chia seeds add an extra crunch. They also pack a nutritional punch of omega 3s.
  • Cinnamon: For more depth of flavor and just a hint of cinnamon.
  • Salt: To enhance all the flavors.
  • Date Syrup: For sweetness! Date syrup is just ground up dates. I love using it as a natural sweetener.
  • Vanilla Extract: For a hint of vanilla.
  • Coconut Emulsion: I added coconut emulsion/extract for some extra coconut flavor. The granola is great without it, but this just adds another burst of coconut.

Sugar-Free Coconut Chia Granola

How to make Sugar-Free Coconut Chia Granola

Step 1. Preheat the oven to 300° F. Line a baking sheet with parchment paper.

Step 2. In a large bowl combine the oats, millet, 1/2 cup of the coconut, chia seeds, and cinnamon. Stir to combine.

Step 3. Add the date syrup, vanilla extract, and coconut emulsion. Stir until all the dry ingredients are evenly coated.

Step 4. Spread in an even layer on the baking sheet. Bake for 25-30 minutes, stirring halfway through.

Step 5. Let cool completely on the baking sheet. Then, break in to chunks and enjoy!

thank you for the oil free recipe. I'm getting introduced to wild Bolete mushrooms here in Colorado, and everyone sautes Bolete's in butter or olive oil. I'm on a veggie, oil free regimen for heart health reasons. and your recipe suggestion may fill the bill. I can't wait to give it a try.
