Sweet Potato Pasta Sauce

Sweet Potato Pasta Sauce

Pasta is a go-to dish for many people. It's quick and easy. You almost always have some sort of pasta sitting in your pantry. Most people enjoy pasta, so you don't have to worry about displeasing picky eaters.

But what do you do with pasta? Sure, you could throw on some salt and pepper and call it a day. That's a little boring though. And could get old after a few meals.

I've been in a bit of a pasta rut myself. I bought a big box, and I have a lot of it lying around.

A month or so ago I made Pad Thai. Which was INCREDIBLE. But honestly, there's a lot of prep work involved in that recipe. When I want something quick, I need an easier option.

I started making myself this Oil-Free Spinach-Mushroom Pasta recipe. It is also one of my favorites. But I wanted to change it up. I wanted something new and different.

I've seen sweet potato pasta sauce recipes before. And, being me, I had a roasted sweet potato in my fridge. So I decided to experiment.

I ended up with a final product that tastes pretty similar to my Sweet Potato Soup recipe. But I'm not mad. That soup is incredible. Now I can eat it on pasta too!

Now I know what you're thinking. Elizabeth, not everyone has a roasted sweet potato sitting in their fridge.

I get it. If you don't have time (or don't want to spend the time) to roast a sweet potato. Just pop it in the microwave and you'll have a fully cooked sweet potato in 5 minutes. Problem solved!

Let's get into it.

Sweet Potato Pasta Sauce Ingredients

  • Sweet Potato: I prefer to roast my sweet potatoes, because the flavor is MUCH better. But the microwave is a quicker alternative.
  • Mushrooms: You can use raw or cooked mushrooms for this. I prefer cooked because cooking destroys the small amount of toxins present in raw mushrooms.
  • Garlic: Again, you can use raw or cooked garlic. Normally I would use raw, but I've been buying pre-roasted garlic from Fresh Thyme and loving it!
  • Nutritional Yeast: Nutritional yeast adds a cheesy flavor and, as the name suggests, some vitamins and minerals.
  • Liquid Aminos: For a salty flavor. You can use soy sauce or tamari if you don't have liquid aminos on hand.
  • Smoked Paprika: Smoky flavor AND that subtle sweetness of paprika, yes please!
  • Liquid Smoke: For more smoky flavor.
  • Cayenne: For an extra kick. If you don't like spice, just leave out the cayenne.
  • Vegetable Broth: We'll use veggie broth to thin out the sauce. Add as much or as little as you like to achieve your desired consistency.

How to Make Sweet Potato Pasta Sauce

Making this sauce is so easy once you have a cooked sweet potato on hand.

Just add all the ingredients (except the vegetable broth) to a food processor. Turn the processor on and add the vegetable broth, until you achieve the consistency you'd like.

Serve on your pasta of choice. Some of my favorites are chickpea pasta and tofu spaghetti (seen in the pictures). Enjoy!

Ingredients

  • 1 Large Sweet Potato, cooked*
  • 4 Ounces Mushrooms (raw or cooked)
  • 4 Cloves Garlic
  • 1 Tablespoon Nutritional Yeast
  • 1 Tablespoon Liquid Aminos
  • 1/2 Teaspoon Smoked Paprika
  • 1/2 Teaspoon Liquid Smoke
  • 1/8 Teaspoon Cayenne
  • 1/3-1/2 Cup Vegetable Broth

Instructions

  1. Add all the ingredients except the vegetable broth to a food processor. Turn the processor on and add the vegetable broth, until you achieve the consistency you'd like. Serve on your pasta of choice. Enjoy!

Recipe Notes

*Roasted sweet potato tastes better. Steaming or microwaving is are quicker alternatives.

thank you for the oil free recipe. I'm getting introduced to wild Bolete mushrooms here in Colorado, and everyone sautes Bolete's in butter or olive oil. I'm on a veggie, oil free regimen for heart health reasons. and your recipe suggestion may fill the bill. I can't wait to give it a try.
