Toasted Walnut Butter

Toasted Walnut Butter is incredibly smooth and creamy. It's super simple to make and is crazy good for you. Only ONE ingredient!

We're talking walnuts today, friends. I think walnuts are both an over- and underrated nut. I know. Sounds counter-intuitive, but hear me out.

Everyone touts the health benefits of walnuts. Omega-3s! Healthy fats! Helps your brain!

All of that is true. In fact, I'm about to be one of those people who talk about how great walnuts are. BUT here's the thing: people never eat walnuts. When you go to the store to buy mixed nuts, the mixes rarely ever include walnuts. Most party hosts don't put walnuts out for guests to snack on. What gives?!

I don't know about you, but I think it's just because people haven't tried Toasted Walnut Butter yet.

I've made a couple other recipes with walnuts, like this salad, or this nut butter, or this amazing granola. But for this recipe walnuts are the star! ... Okay they're the only ingredient. But still, this Toasted Walnut Butter is amazing and it really does have some amazing health benefits.

Benefits of Walnuts

Walnuts have tons of antioxidants. They're a great source of Omega-3s. They've been shown to decrease inflammation. And walnuts are indeed good for your brain.

Walnut consumption is linked to faster processing speed and better memory. As a busy student/young professional I'll take any brain boost I can get!! Of course there are so many other wonderful benefits of walnuts that I'm not going to mention here but a quick google search can show you all the info you'd ever want to know.

So now that I've (hopefully) convinced you that walnuts are amazing, let's actually eat some! Toasted Walnut Butter is super simple.

How to make Toasted Walnut Butter

Start by toasting the walnuts (obviously). Heat them in the oven for 10-15 minutes. This differs slightly from my usual nut butter recipes. Normally I toast the nuts just slightly so they release their oils more easily when we process them. But for this, we want to toast the walnuts a few minutes longer to get that nutty flavor to come out.

Once the walnuts are nice and toasty (juuust before they turn brown), remove them from the oven and stick them in the food processor. Process for 5-10 minutes. It shouldn't take that long because walnuts have a higher oil content than most nuts.

Soon you'll have super creamy walnut butter. Perfect for smearing on toast, drizzling over oatmeal, eating with a banana, or just treating yourself to a spoonful (<-- my favorite method).

Store this delicious Toasted Walnut Butter in a mason jar or similar container and enjoy!

  • 3 Cups Raw Walnuts


  1. Preheat the oven to 350. Place the walnuts on a baking sheet and toast for 15 minutes, or until the walnuts just start to turn brown.
  2. Remove the walnuts from the oven and transfer to the food processor. Process for 5-10 minutes until the walnuts become a super smooth nut butter. Scrape down the sides of the processor as necessary. Enjoy!

thank you for the oil free recipe. I'm getting introduced to wild Bolete mushrooms here in Colorado, and everyone sautes Bolete's in butter or olive oil. I'm on a veggie, oil free regimen for heart health reasons. and your recipe suggestion may fill the bill. I can't wait to give it a try.
