Vegan Double Chocolate Cookies

Full of chocolate goodness these Vegan Double Chocolate Cookies are easy to make and even easier to eat. Made with whole food plant-based ingredients!

I love healthy desserts. I'm glad God gave us to tools to learn how to eat healthy, nourishing foods that are delicious at the same time. There is such a beauty in God's creation.

These Vegan Double Chocolate Cookies are in that healthy desserts category. Yes, there's definitely some chocolate in these cookies, but the ingredient list is so clean. No bad-for-you butter or cholesterol-filled eggs. No added/refined sugars and no processed flours.

Vegan Double Chocolate Cookies

Ingredients

In fact, all of the ingredients are health promoting!

  • Almond Butter: filled with vitamin E and other healthy fats
  • Date Sugar: a natural sweetener made from fruit
  • Ground Flaxseeds: a non-toxic source of essential omega-3s
  • Oat Flour: gluten free and made from oats
  • Buckwheat Flour: gluten free (despite the name) and made from seeds
  • Applesauce: another natural sweetener filled with fiber

Add in some cocoa powder, vanilla extract, baking soda, salt, and (of course) chocolate chips, and you'll be on your way to Vegan Double Chocolate Cookies.

I love giving these cookies to friends because I know I'm feeding them delicious food that is also so good for them. No more guilt about cooking unhealthy sweets for your friends and family. With these cookies you can prioritize both your health and theirs!

How to make Vegan Double Chocolate Cookies

To make, mix the almond butter, date sugar, ground flaxseeds, and vanilla extract. Then add the oat flour, buckwheat flour, cocoa powder, baking soda, salt, and applesauce. Once the dough comes together, stir in the chocolate chips (make sure to find a vegan brand!!).

Then, scoop tablespoon-sized balls of cookie dough onto a parchment-lined baking sheet. Press flat because the cookies will not spread in the oven. Bake for a mere 8 minutes. Then enjoy these delicious AND healthy Vegan Double Chocolate Cookies.

Ingredients

  • 2/3 Cup Unsweetened Almond Butter
  • 1/2 Cup Date Sugar
  • 1 Tablespoon Ground Flaxseeds
  • 1 Teaspoon Vanilla Extract
  • 1/2 Cup Oat Flour
  • 1/3 Cup Buckwheat Flour can sub oat flour
  • 1/2 Cup Cocoa Powder
  • 1/2 Teaspoon Baking Soda
  • 1/2 Teaspoon Salt
  • 1/3 Cup Unsweetened Applesauce
  • 1/3 Cup Vegan Chocolate Chips

Instructions

  1. Preheat the oven to 350 degrees. Then, line two baking sheets with parchment paper.
  2. In a large bowl, mix the almond butter, date sugar, flaxseeds, and vanilla extract until combined.
  3. Add the oat flour, cocoa powder, baking soda, salt, and applesauce. Mix the dough, using your hands if necessary. Stir in the chocolate chips.
  4. Bake for 8 minutes. Enjoy!

Recipe Notes

If you’re almond butter is very runny you may need less applesauce.

thank you for the oil free recipe. I'm getting introduced to wild Bolete mushrooms here in Colorado, and everyone sautes Bolete's in butter or olive oil. I'm on a veggie, oil free regimen for heart health reasons. and your recipe suggestion may fill the bill. I can't wait to give it a try.
