Vegan Peanut Butter Kiss Cookies

A healthy version of the classic Christmas cookie, these Vegan Peanut Butter Kiss Cookies are filled with good-for-you ingredients -- completely whole food plant based and fruit sweetened. A perfect addition to your Christmas baking.

Peanut Butter Kiss Cookies are one of my FAVORITE types of cookies. I have so many childhood memories of baking Christmas cookies with my mom, aunt, sister, and cousin. We always made Peanut Butter Kiss Cookies. So, naturally, when I started thinking about Christmas cookies for this year, I knew I needed to make a delicious plant-based version.

I started testing recipes and eventually came up with these delicious Vegan Peanut Butter Kiss Cookies. Seriously, peanut butter is just the best. I love it.

I'm calling these cookies kiss cookies, but I'm not actually using kiss chocolates. Those things are loaded with processed sugars and dairy. Instead, I'm using unsweetened chocolate. I added date syrup to sweeten them. You can add as much or little as you want to sweeten to your taste. Plus, with melted chocolate, you can totally decorate these cookies however you want.

How to Make Vegan Peanut Butter Kiss Cookies

To start, make the cookie dough (and don't be afraid to eat some). You'll mix unsweetened peanut butter, date sugar, flaxseeds, and vanilla extract. Then, add in oat flour, peanut powder (for extra peanut butter flavor), baking soda, and salt. Depending on the consistency of your peanut butter, the dough may be a little dry. Add in applesauce by the tablespoon until you can easily form the dough into a ball.

Use a tablespoon measure to form cute cookie balls. And flatten the balls with the palm of your hand because they won't spread in the oven.

While the cookies are baking, prepare the chocolate. Be sure to follow my specific instructions below to make sure you don't burn the chocolate

When the cookies come out of the oven, you can go crazy with the decorations! I put my chocolate in a piping bag and piped little designs on the cookies. If you don't feel like being that creative, a spoon will do. Enjoy!

Ingredients

  • 2/3 Cup Unsweetened Unsalted Peanut Butter
  • 1/2 Cup Date Sugar
  • 1 Tablespoon Ground Flaxseeds
  • 2 Teaspoons Vanilla Extract
  • 1/2 + 1/3 Cup Oat Flour
  • 1/2 Cup Unsweetened Peanut Powder
  • 1/2 Teaspoon Baking Soda
  • 1/2 Teaspoon Salt
  • 1/4 Cup Unsweetened Applesauce if you need it
  • 2 ounces Unsweetened Dark Chocolate
  • 2 Teaspoons Date Syrup +/- to taste

Instructions

  1. Preheat the oven to 350 degrees. Then, line two baking sheets with parchment paper.
  2. In a large bowl, mix the peanut butter, date sugar, flaxseeds, and vanilla extract until combined.
  3. Add the oat flour, peanut powder, baking soda, and salt. Mix the dough, using your hands if necessary. If the dough is too dry, add the applesauce 1 Tablespoon at a time, until you can easily form a ball.
  4. Drop Tablespoonfuls of dough onto the prepared baking sheet. Then flatten the cookies with the palm of your hand (they won't spread during baking).
  5. Bake for 8 minutes.
  6. While the cookies are baking, melt your chocolate in the microwave for 1.5 minutes on 50% power. Stir the chocolate for a minute. If it isn't completely melted, microwave again for 30 seconds on 50% power. Stir for 30 seconds. Repeat until all the chocolate is melted. Then add the date syrup.
  7. Once the cookies are baked, decorate them with the chocolate however you'd like. Enjoy!

Recipe Notes

If your peanut butter already contains salt, add 1/4 teaspoon of salt instead of 1/2 teaspoon.

thank you for the oil free recipe. I'm getting introduced to wild Bolete mushrooms here in Colorado, and everyone sautes Bolete's in butter or olive oil. I'm on a veggie, oil free regimen for heart health reasons. and your recipe suggestion may fill the bill. I can't wait to give it a try.
