Vegan Pumpkin Spice Latte Granola

Fall spices meet the rich taste of espresso in this completely fruit-sweetened and oil-free Vegan Pumpkin Spice Latte Granola.

Remember three weeks ago when -- IN AUGUST -- Starbucks released the Pumpkin Spice Latte for the fall season?

I remember. Why? Because it was a sweltering day. I was drenched in sweat after my 10 minute walk to class at 8:30 in the morning!!

Why on earth would Starbucks introduce their fall drinks SO early?!

Later, I was experimenting with granola flavors and I remembered exactly why Starbucks released the PSL in August: it's delicious!

The mix of cinnamon, nutmeg, ginger, and cloves, with warm coffee is to die for!

Well... except for the fact that the PSL usually comes with cow's milk and added or artificial sugar. Ugh.

That's where Vegan Pumpkin Spice Latte Granola comes in, though! All the spices and caffeine you want, with none of the bad stuff!

You will honestly crave this stuff more than an actual Pumpkin Spice Latte. And it's actually good for you, so no guilt in having multiple servings :)

So what is in this scrumptious snack that is so much better than a PSL?



Like any granola, Vegan Pumpkin Spice Latte Granola starts with oats. Rolled oats to be specific.

In trying to live a healthy lifestyle, we should all try to eat several servings of whole grains each day. My favorite way to do this is oats (like overnight oats or berry oatmeal)!

Oats are so yummy and filled with fiber, you'll never know you're eating something that's actually good for you!

Date Syrup

I use date syrup in lots of recipes as a sweetener.

The best part about date syrup is that it's actually made of 100% dates. By using date syrup you'll get nutrients, (more) fiber, and sweetness without spiking your blood sugar or creating unhealthy sugar addictions.

Friends, you are now just 20 minutes away from warm and crispy Vegan Pumpkin Spice Latte Granola. All you need to do is mix the ingredients together, spread on a (parchment-lined) baking sheet, and bake. Enjoy!

Vegan Pumpkin Spice Latte Granola

  • 1 1/2 Cups Rolled Oats certified gluten-free if necessary
  • 1/3 Cup Date Syrup
  • 2 Teaspoons Espresso Powder can sub instant coffee
  • 2 Teaspoons Pumpkin Pie Spice see notes


  1. Preheat the oven to 325. Line a baking sheet with parchment paper.
  2. In a large bowl, combine all the ingredients until mixed thoroughly.
  3. Spread evenly on the baking sheet. Bake for 15 minutes. Let cool for 3-5 minutes. Enjoy!

Recipe Notes

To make your own Pumpkin Pie Spice, combine 1 1/4 teaspoon cinnamon, 1/4 teaspoon ground ginger, 1/4 teaspoon nutmeg, and 1/4 teaspoon cloves. This makes just enough for Pumpkin Spice Latte Granola.

thank you for the oil free recipe. I'm getting introduced to wild Bolete mushrooms here in Colorado, and everyone sautes Bolete's in butter or olive oil. I'm on a veggie, oil free regimen for heart health reasons. and your recipe suggestion may fill the bill. I can't wait to give it a try.
